Basmati rice with mango

Ingredients for 2 people:

- 200 g basmati rice,
- 1 onion,
- 3 tomatoes,
- 400 ml of hot vegetable broth (from cubes)
- salt and pepper,
- 1 tablespoon raisins,
- 2 tablespoons pine nuts,
- 1 tablespoon parsley,
- 1 mango cut,
- 1 tablespoon oil to wok.

Step by step:

Peel and thinly slice the onion. Cut the tomatoes into particles. Heat the oil in a large frying pan, add the onion and simmer until tender.
Add the rice and stir-fry briefly until grain cover with oil. Add the tomatoes and cook for 1 minute.
Pour the hot broth stirring the rice and simmer 20 minutes, covered. Drain the rice if necessary.
Add salt and pepper to taste.
Slice mango and add to the rice with raisins, parsley and pine nuts. All is well warms.
Perfect with oriental salad.
